This meal takes simple sautéed chicken up a notch with a spicy (but not hot) southwest corn salsa. To slice grape or cherry tomatoes, place them between two plastic lids from storage containers (careful not to press down hard!), hold down the top lid, and slice between the lids to cut all the tomatoes at once.
